Hmm, what about The Boondocks and The Venture Bros. they may both be Adult Swim, but they both are very well traditionally-animated shows and improve in appearance each season.

I loved Animaniacs and Rocko's Modern Life. Ren & Stimpy was another great show. Ed Edd n' Eddy was one of my personal favorites.

Also, I was never a fan of Invader Zim. There were some funny parts but it wasn't a great show in my opinion.
