In the movie, Dawn of the Dead, zombies are killed when the brain is destroyed.  That has been the main way to kill a zombie.

In the recent game, Dead Rising, it didn't matter.  You could shoot them in the heart and that would kill them.  Whether it was getting their torso cut off with a chainsaw or a really good whack with a lead pipe, it didn't matter whether you got the brain or not.

In a few places it gives the option to kill them is either to destroy the brain or destroy the spinal chord.

My way of killing is a technique I call the big boot. What you do is kick them in the chest as if you were kicking down a door and then jump and land with a crushing boot on the head. There are quite a few ways to kill zombies without a weapon.
