Original Italian Bolognese. That one's pretty nice.

Requires:
1 kg            Ground beef
3               Cloves of garlic
3               Carrots
200 g           Celeriac (I usually just take celeriac salad, as that stuff's already cut into pieces)
2               Big onions
800 g           Canned tomatoes
600 g           Spaghetti
125 g           Butter
500 ml          Milk
3               Lombardi peppers
                Salt
                Pepper
                Pouillon (for about half a liter of water)
                Olive oil

Start off by chopping the onions and grating the carrots as well as the celeriac (if you don't use celeriac salad). After that, put a huge chunk of butter as well as some olive oil into a frying pan and add the vegetables. Let them cook for 20 to 30 minutes on a low heat. Don't forget to stir it up every now and then.

Continue by frying the ground beef in a second frying pan and keep mincing it, using a high temperature until it's crispy and well one. If the meat it should be scorched in some parts of the pan, you can use a sip of white wine to loosen it from the pan. Now, add about half a liter of milk to the pan with the fried, minced beef and keep boiling it on a low flame.

As soon as the milk starts boiling, add the canned tomatoes, the ground or chopped lombardi peppers and the vegetables from the other pan and Stir it up. After that you can let it boil for a while and use salt, pepper and bouillon to taste. At this point I usually also add some water with the bouillon, as the sauce tends to become very try otherwise. Let it cook for about half an hour (the recipe that I used as a basis actually recommends up to 2) and enjoy your meal.

You can start cooking the spaghetti or noodles as soon as you have finished putting the ingredients of the sauce in the same pan or pot. That way they should be done in time. Oye and don't use oil in that process... I know that some people in the modern world have learned to do so (I used to do it myself until I knew better) and it completely ruins the noodles, makes them sticky as hell and is anything but traditional in the Italian cuisine... just stir it up regularly.
