butter leek and potato soup (aka hot vichyssoise) serves 6 (depending on appetite)
can easily be made 100% vegan or vegetarian if you get the replacement ingredients

you will need!
2-3 leeks (medium size)
1 cup butter (or equivalent)
2 potatos  
2 cups chicken broth or bullion cubes equivalent
1 cup heavy cream
1/2 sliced onion (optional)
1-2 cups sliced portabello mushrooms (optional)
chicken and bacon can also be added (never tried it)

precooking:
wash all veggies thoroughly
skin potatoes (optional)

cooking!!!!
1) sauté leeks in butter until they get all soggy/limp
2) add broth and cream, mix thoroughly
3) thinly slice potatoes as leeks cook (i like using a cheese grater instead, works really well), slice up mushrooms and onions
4) mix all together in pot
5) add few pinches of salt, milk if it's not creamy enough (depends on the size of the potatoes), and any spices you'd like (oregano and rosemary work really well)
6) let simmer on low heat 20 mins BAM done enjoy

you can also add honey or lemon juice pre-simmering if you have that lying around

if you serve over rice this'll last twice as long

hey guys i just remembered a good ol' recipe from way back when so imma bump this thread



[size=]5-minute chocolate mug cake[/size]

you will need:

4 tablespoons cake flour (plain flour, not self-rising)
4 tablespoons sugar
2 tablespoons baking cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
a small splash of vanilla extract
1 coffee mug



1. add the dry ingredients to mug and mix well

2. add the egg and mix thoroughly

3. pour in the milk and oil and mix well

4. add the chocolate chip (if using) and vanilla extract and mix again

5. put the mug in the microwave and cook for 3 minutes at 1000 watts. the cake will rise over the top of the mug but don't be alarmed

6. allow to cool a little, and tip onto a plate if desired
