It's pretty simple actually. All you've got to do is making the person you do that to concentrate onto something difficult, and only on that. Asking for the way is the best thing you can do, it takes up pretty much all of the concentration of someone. They keypoint was when Derren gave that guy his hand though, shaking it and then suddenly stopping but not letting go. The guy was so confused and was trying to figure out what Derren was doing then, not concentrating a bit on what Derren was saying or doing at that moment. He was thinking about the way Derren asked for AND trying to figure out what just happened, why Derren shook his hand and suddenly stopped at the same time.

The guy must've been hella stupid because it worked twice and the second time Derren didn't really do anything.
